I remember how excited (and surprised ) I was when I first saw the trailer for a new series on Apple TV- Knife Edge: Chasing Michelin Stars. I was pleasently surprised to see a familiar face - Chef Giuseppe Iannotti, the 2 starred Michelin Chef of Kresois in Telese Terme (Bn). It's a special feeling when someone you know gets the international spotlight they deserve.

If you haven't watched the "Knife Edge" episode featuring Chef Iannotti (#7 which aired mid November), honestly, make it a priority. It’s an electrifying glimpse into a mind pushing the boundaries of Italian fine dining. Don’t worry, no spoliers here! But I will say that the show is well made, highlighting his technical precision and philosophical approach, while exploring the challenges of managing his restaurants in Benevento and Naples. The host, Jesse Burgess, is charismatic, enhancing the captivating narrative. The episode captures his brilliance but to be honest, condensing such a unique personality into a short narrative had to be tough. The episode offers an exciting snapshot of his work, but for those who know him, we realize his artistic personality can't be fully captured in just an hour of TV.

I've followed Chef Iannotti's journey since his early days, recalling my first visit in 2013. This long-term view adds depth to my appreciation of the chef and his team - which includes Maitre Sommelier Alfredo Buonanno and Sous Chef Eugenio Vitagliano. When I say "complex personality," I'm referring to his deep commitment that extends beyond cooking, embracing art, philosophy, and meticulous technique. His ventures which include—Kresios in Benevento, 177 Toledo, Anthill, and Luminist in Naples—reflect both his commitment and the significant pressure he manages. His resilience shone during COVID-19 when he creatively launched a 'dark kitchen,' showing his dedication even with dining rooms closed. TV may need a story arc, but his true, profound commitment to his craft is best experienced in person, at his table.

In short, if you’re new to the ‘Iannotti story’ start with "Knife Edge: Chasing Michelin Stars episode 7" to get a sense of the scene. Then, make sure to reserve a spot at Kresios to truly appreciate his vibe firsthand. If you’re like me, and haven’t been in awhile- well, maybe its time to go back!
